Also known as Bishops weed or carom seeds, Ajwain seeds have been used in Ayurveda for centuries. The seeds add a pungent flavour to the dishes and also are known to have a lot of health benefits. They are used raw as well as in cooking such in batter for fritters, savoury pancakes, Amritsary fish pakoras, prantha, samosa shells and roti. Use in small quantities as it can easily over power the flavours. Spice can also be chewed whole along with fennel seeds, after a heavy meal as a digestive aid and mouth freshener. It leaves a sweet aftertaste although bitter in the beginning.
